Our Story

Bhaji-Pala is a Marathi word, which translates roughly into green veggies and herbs that are the heart of western Indian vegetarian cooking. In bringing this concept to Manchester, this award winning team aim to bring the complex arrays of tastes, textures and ingredients that have been central to the western Indian Kitchen for centuries. We will endeavour to maintain this authenticity while adapting it vegan palates in Manchester.

India as a country has complex food histories with 5000 years of settlers and multitude of belief systems. Regions, religions and history play a significant role in what constitutes the fabric of ‘Indian food’. The bottom line is that Indian cuisine is far from ‘homogenous’ and every geographical region has its own food culture.

Western India compromises states of Maharashtra, Rajasthan, Gujarat and Goa. While coconut, rice and the offerings from the coast dominate the Goan and Marathi cuisine, lentils, millets, gram-flour and dairy dominate the Gujarati and Rajasthani Kitchen. Each of these states has rich history of vegetarian cooking. Our chefs have perfected these recipes and trialled vegan variations of the same to bring the region via its unique ‘Bhaji-Pala’ to your tastes.
